Ingredients (Serves 12)


Base

  • 1 ½ cups organic almond flour

  • 1 cup oat flour (or finely ground rolled oats)

  • ½ cup coconut sugar (low glycemic)

  • 2 free-range eggs

  • ½ cup Greek yogurt (protein boost, probiotic rich)

  • ¼ cup cold-pressed olive oil (heart-healthy fats)

  • 1 tsp vanilla bean paste

  • 1 tsp baking powder

  • ½ tsp sea salt

  • 1 cup organic blueberries (antioxidant-rich)

  • ¼ cup sliced almonds


Crumble Topping

  • ¼ cup almond flour

  • 2 tbsp coconut sugar

  • 2 tbsp grass-fed butter (or coconut oil)

  • Pinch of cinnamon


Directions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with parchment cups.

  2. Whisk eggs, yogurt, olive oil, and vanilla bean paste in a large bowl.

  3. In a separate bowl, combine almond flour, oat flour, sugar, baking powder, and salt.

  4. Fold dry ingredients into wet until just combined. Gently add blueberries.

  5. Divide mixture evenly into cups. Top with sliced almonds.
